The wines of Lucien Boillot aren't the shy and retiring type.
Often described as ‘meaty', ‘substantial', ‘tannic', ‘robust’ and spicy the wines have a big presence on the palate.
The son of the now retired Lucien, Pierre Boillot, manages the domaine and is a rare master of both the Côtes de Beaune and the Côtes de Nuits. Not only does he have exquisite vineyards but he also posseses the savoir-faire and skill to create wines of incredible finesse and intensity.
The choice on offer from Boillot is extensive. Whether you choose a Premier Cru from Les Champonnets, Les Corbeaux, Les Cherbaudes, or one of the village Beaune, Fixin or Côte-de-Nuits-Villages, what you'll get is a powerful bottle that will cellar and soften, for years.
Yields are limited to 30 to 45 hl/ha and no chemical fertilisers are used meaning the soil is turned to promote diversity and health. All grapes are harvested by hand and vinified at the domaine in Gevrey-Chambertin and maximum of 30% new oak barrels are used to age the wines for between 16 and 18 months (depending on the vintage)
Every cuvée produced is a classic representation of its appellation; from Volnay and Pommard to Gevrey and Nuits-Saint-Georges, and Pierre’s aim is to craft terroir-driven wines of purity and finesse that are rich, plump and luscious.
