Like many other reds, it was produced partly with full clusters that were foot trodden and with indigenous yeasts in troncoconic French oak vats and matured in 225-liter barrels and 2,000 liter foudre for 18 months. It's darker—the Mencía has thick skins and the soil gives a note of earth—and it's a little more rustic. It comes in with moderate ripeness and 13% alcohol, balanced and harmonious but with quite a lot of tannins that might require a little more time and\/or powerful food. 980 bottles produced.
