The Juyondai “Kakushin” series features unique and limited sakes released annually between December to February only.
The Kakushin Yamadanishiki Junmai Ginjo has a light taste, with a rich fruity aroma in the entrance, featuring green apple, white peach, melon and other flavors. The slightly spicy taste brings out a neat style, and the final note is elegant. Best with Japanese cuisine, sashimi, and hot pot with a rich flavour.
Yamada Nishiki is known as the “King of Sake Rice”. Cultivated by “Yamadaho” and “Short-stem Ferry”, Yamada Nishiki is used for 80% of Daiginjo-grade sake rice and it is the favourite of brewers as it has all the necessary conditions for the brewing of high-quality sake. The protein content in the rice grains is lower than that of ordinary rice, and does not break easily when the rice is polished, making it very suitable for high-polished rice sake.
