EXCLUSIVE INTERVIEW
Crafting Champagne with Sébastien
Q: What is your favorite moment of the day at the estate?
A: The best moment of the day is early morning, when I enter the cellar: I count the steps, I awaken all my senses, the scents, the sights, and the sounds. The wine speaks to me.
Q: Can you describe a pivotal moment in your career when you knew you were on the right path as a winemaker?
A: In 2004, during the harvest, my son was born on September 24th. I found myself constantly moving between the clinic and the wine press, caught between two profound moments of creation—one in the vineyard, the other in my own life. In that instant, everything felt perfectly aligned: my wife, my son, and the harvest—a defining milestone where family and winemaking became inseparably intertwined.
Q: What is the most unexpected inspiration you've drawn from outside the world of wine that has had a lasting impact on your work?
A: Motorcycle trial riding. It’s a discipline that demands patience, balance, and foresight—you never fixate on the first step but always look ahead to the next. And it's the same for winemaking; it requires patience; the results aren't immediate. You trust the process, embrace the waiting, and when the results arrive, they’re truly rewarding.
Q: What does a perfect glass of Henri Giraud Champagne mean to you?
A: A perfect glass is a social bond and a link that unites us, a catalyst for laughter, conversation, and connection. An enhancer of emotions, it reminds us that the bottle is always too small because the best moments should never end.
