Description

The 2019 Calicem is 100% Merlot, coming from from vines with an average age of 60 years. The alcohol is 14.5% and the pH is 3.75. It is being aged in new French oak 500-liter barrels for around 18 months. Medium to deep garnet-purple colored, it is a little closed to begin, slowly unfurling to reveal notes of fruitcake, blackberry pie and blueberry preserves with hints of molten chocolate, licorice, powdered cinnamon and camphor. Medium to full-bodied, the palate has a solid foundation of firm, grainy tannins and seamless freshness supporting the densely packed black fruits, finishing long and spicy.

Couvent des Jacobins

It was built in 1389 and is now the tasting room of the estate. The vineyard spreads over 10.7 hectares with three grape varieties : merlot, cabernet franc and petit-verdot since 2010. The average age of the vineyard is about 40 years. The vineyard is organic-farming certified by ECOCERT France since September 2020. To produce the wine of Couvent des Jacobins, vinification takes place in traditional, temperature controlled, cement tanks. Malolactic fermentation takes place in a combination of French oak barrels for a portion of the wine and remainder occurs in vat. The wine is aged in an average of 50% new, French oak barrels for between 12 to 15 months prior to bottling.
