Very smooth, clear and refined, the Dassai 39 is a skillfully balanced sake that combines the best qualities of both Dassai 23 and 45 into a sake with a more subtle aroma, higher acidity, and a creamy texture. The mid palate gives a crisp, clean, dry taste. Excellent harmony of flavour and scent. Short, clean finish. Excellent overall well balance.
An attractive and lavish nose reveals vivid notes of tropical, white blossom fruit and fresh apple, whilst the palate is delicate and textural, with a delicious umami depth and a fine dry finish. Elegant and poised, this is best served slightly chilled and enjoyed with seafood.
