Mirabelle preserves are laced with lemon but still convey a slightly syrupy, sticky combination of viscosity and sheer sweetness. This glassy elixir is undeniably persistent, but lacks the differentiation or freshness found in the corresponding gold capsule Auslese. Perhaps its nine grams of acidiy are simply insufficient to balance the load of residual sugar. It would take a long while for the sense of sweetness here to begin backing off, and I wonder whether the wait will be worth it in terms of added complexity. There were a mere hundred liters, incidentally.
